Bacon, bacon, bacon where art though bacon?
Bacon has become the quintessential food of all foods. These days it seems like you hear about bacon being transformed or modified one way or another. Now, don’t get me wrong nothing makes me happier than to see bacon add its special je ne sais quoi to meals, dishes and believe it or not to drinks and pastries.
We have all experienced the moment where the smell of cooked bacon has literally stopped us in our tracks. That smokey and in some cases maple infused smell creates euphoric like feelings to us lucky carnivores. I still remember as a child, a typical Sunday morning breakfast would normally consist of eggs, croissants, diced potatoes and onions (Mom’s own rendition of home fries), cold cuts and a mountain of deliciousness….bacon. Breakfast during the weekends had become one of my favorite meals (it still is especially when I visit my parents). Now when I said there was a mountain of bacon, I literally mean a mountain of it – the pork gods were always generous and good to our family. Truth be known, I would go through the stack of bacon and try to single out those strips that were cooked to almost perfection…not too limp but not too crispy…just right. The croissants had two purposes, first to satisfy my buttery craving and secondly to be used as a vessel…to be stuffed with as much crispy bacon as I could. It was and still is the best of both worlds – buttery croissants and the salty goodness of bacon. But for me it was the “process” that I loved the most: first take the piping hot croissant from the oven, tear it apart without burning my fingers, take a whiff of that buttery goodness and believe it or not add more butter to it. Nothing like seeing golden butter melt in the heat of this Parisian staple. Now it was time to add the bacon, it was best to add crispy bacon as opposed to the “perfectly cooked one’s” so that I could experience the crunch of the crispy bacon but also feel the softness that the flaky croissants had to offer. You would think I would be content with just this process but alas, this was not the case. The piece de rรฉsistance was when for the mountain of bacon was all gone and my sister and I could take our toasts and lather up the bacon drippings that was found at the bottom of the mountain of yummniess. Now, for those weak at heart…I highly suggest you stop reading. Now for the rest of us, all I can say is WOW! The taste of the toasts with the drippings was and IS spectacular. It truly is amazing and for those out there rolling your eyes in sheer disgust – all I can say is: try it before you knock it. Who needs maple spread, when you have bacon spread!
Like I mentioned earlier, today the food industry is inundated with new food ideas comprising of bacon somehow. Almost every component of a dining experience can include the divine meat (can you tell I’m biased) from bacon martinis to bacon cupcakes.

I had the pleasure of taking part in @tours_de_la_table
guided walking tour - exploring Montrรฉal`s Chinatown. Engaging host, interesting cultural facts, and my favourite, tasty dishes made for a great afternoon.๐๐

Having a very engaging and informative guide is key to any successful tour, and Mรฉlissa Simard, founder of Round Table Tours/Tours De La Table nailed it. Melissa has a wealth of knowledge regarding both Canadian and Chinese history and its connection to Montreal.
.
During the tour, I learned that the Chinese Holiday Inn, the only Chinese Holiday Inn in Canada other than China, all the rooms and decor in the hotel are done in respect to the Feng Shui practice. Additionally, I also learned, amongst many other interesting facts regarding Montreal and its beloved Chinatown, that 50% of businesses in Montrรฉal`s Chinatown are Vietnamese owned.

โ The classic Vietnamese dish, Bรกnh mi (Vietnamese sandwich), was perfect to start off this yummy culinary tour!๐ฅ๐
โ @dobeandandy restaurant: BBQ pork, BBQ duck, chicken, and crispy pork. ๐YES!!!
โ @chezchili_mtl: Traditional Hunan and Sichuan dishes are their specialty. I devoured their tofu with spicy blackbean sauce!! AND their spicy lotus was amazing! I was pleasantly surprised as to how much I enjoyed this dish! ๐ Plus, their stir-fried Cumin lamb...I could have eaten all of it!!!๐๐
โ Kim Fung eatery: dim sum dishes of rice noodles, dumplings, cuttlefish, and Shumai (Chinese dumplings). ๐ฅ๐ฅ
โ For drssert: Dragons beard candy dessert: Similar to cotton candy, but with some saltiness from peanuts and sweetness from coconut...super tasty!๐

All aspects of this dining experience were spot on - warm hospitality, tantalizing cocktails, and dishes that pop with flavour. ๐ฅ๐ธ๐ฅ

Foxy`s head chef, Catherine Couvet Desrosiers and her talented brigade made exceptional wood-fire dishes, that left me wanting for more!!

Sabrina master mixologist at Foxy, made several tantalizing libations for me, but one stood out like no other - the New Delhi.๐๐ธ๐ฅ The New Delhi Cocktail was by far the best cocktail I`ve had in a very, very long time! Exotically addictive! ๐
.
Dishes that I was spoiled with: Homemade feta and pita: 1) burnt eggplant, blueberry, walnut and honey. 2) Radicchio: garlic confit, anchovy, olive and sourdough bread. 3) Cappelletti: corn, chanterelle and nasturtium. 4) Ontario walleye: porcini, lobster mushroom, sherry and chevril. Stunning dishes!!๐

I loved the fact that you could see chefs slicing tasty Peking ducks in the beautiful dining room, as patrons waited with anticipation for their dishes.

Aside from the tasty Peking duck experience, I thought it was a nice touch that the restaurant staff explained and demonstrated how to properly assemble the duck pancakes. Talk about excellent hospitality and perfect for those not familiar with the peking duck experience!!๐๐

To accompany the Peking duck, we also feasted on some tasty marinated jellyfish, Mapo tofu, fried yellow croaker fish, and date filled desserts.

It should be noted that patrons need to call in advance for their Peking duck order.

The duck tartar was exquisite with the use of Indian spices - a real treat! For the main course, and since I was craving some pasta, I chose their scarpinocc dish with my favourite...le @lecoprin_mushrooms with brown butter!! If that wasn`t enough, it was seafood time!๐ฆ๐ฆ We are talking about scallops, shrimps, salt cod ravioli, and smoked PEI mussels.

Regardless if you enjoy lunch or dinner at Les Fougeres, you won`t be disappointed. An all-time favourite of mine.๐๐

Last week, I had the pleasure of attending a culinary workshop at my alma mater, @lecordonbleuottawa
for an upcoming project.

It had been 20yrs since I last stepped foot in their production kitchen, and I was immediately flooded by so many beautiful memories, and it felt like time stood still. ๐ฉ๐ผโ๐ณ๐

Le Cordon Bleu Ottawa Culinary Arts Institute offers a variety of culinary short courses ranging from demonstrations with tasting, practical workshops, and multiday courses. During this particular workshop, I had the pleasure of seeing students pursue their culinary passions, be it as a hobby and, for some, as a career aspiration.๐จโ๐ณ๐ฉ๐ผโ๐ณ
.
Chef Arnaud DeClercq was the instructor chef during this workshop, where braised trout with Riesling wine sauce and spรคtzle noodles were being taught... absolutely DELICIOUS ๐ ๐
.

I can`t rave enough about their exemplary hospitality. The service was off-the-chart amazing. And the food...well, I was practically licking the sauce off the plate from my poached halibut. I wanted to try something different, and this spectacular dish still has me craving for more!!๐๐๐

In addition to my halibut dish, their tuna crudo, house caesar salad, and their tender beef dish were all spot on.

1 Elgin is the ideal venue for taking in some of Ottawa`s beautiful vistas.

When you`re in need of a sensory overload blind tasting experience @blacktartankitchen delivers with stellar results!!

I had the pleasure of experiencing their Summer Fare Games 4-course tasting menu. Everything from the highly addictive cocktails to the `want more, need more` tasting experience were next level!!
.
The 4-course blind tasting menu had me swooning from the start with their refreshing gazpacho, which was simply fitting on this very hot summer evening. Next was their exemplary scallop dish, which gave a muliti-sensory experience, with the contrast of textures and flavours๐
.
Now my favourite course, Beef time!! ๐๐ Their sous-vide striploin with Dijon potato croquettes were ridiculously tasty!! The piรจce de rรฉsistance...a chocolate and raspberry mousse on a lemon honey crumble with a side of raspberry semifreddo. This was the perfect way to end this extraordinary meal!!๐๐๐
