Chic Choc Spiced Rum is the latest creation that the award winning Domaine Pinnacle company has formulated. Domaine Pinnacle, makers of the prize winning artic botanical Ungava Premium Dry Gin has now tapped into the field of flavorful spiced rum. And from what I have tasted, I can easily predict many awards in Domaine Pinnacle’s future for Chic Choc. I believe they have the perfect blend of spices to make this elixir a force to be reckoned with.
For many years I have always preferred rum over any other ‘hard liquors’. I believe it was because I could easily mix it with fruit juices to calm down what I often considered the ‘strong’ taste of such liquors. Well, all that changed when a close friend of mine introduced me to Ungava Gin. I was instantly hooked. There wasn’t any harshness that I often experienced with other gins, thus making Ungava my favorite. So, you can imagine how excited I was when I received my bottle of Chic Choc.
Amusing ‘history’ of Chic Choc Spiced Rum:
When the love affair between the town rebel and the mayor’s daughter was exposed, he was punished by official decree: scale the unforgiving Chic Choc mountains to retrieve rare spices guarded by a ferocious beast. An impossible feat. Rum bottle in hand, our rebel set off. He returned weeks later, curiously unscathed, spices steeping in his bottle. For decades since, Chic Choc Spiced Rum has been enjoyed by daring explorers, adventurers and thrill-seekers alike.
Created using premium agricultural rum and a selection of Nordic Quebec spices from Quebec’s own Chic Choc Mountains, Chic Choc Spiced Rum redefines the industry standard and is the first ever spiced rum to originate from Quebec. Daring and adventurous, Chic Choc is the perfect complement to a variety of cocktails.
Nordic spices in Chic Choc Spiced Rum:

Eye: Amber, bright and slightly coppery recalling caramel and honey
Nose: Reveals a spicy bouquet with nuances of sugar cane and cinnamon complemented by a subtle peppery tone
Palate: Round and balanced with a rich texture, with notes of vanilla, ginger and Nordic spices. A supple attack leaving a long, warm and pleasant mouthfeel.
Chic Choc Spiced Rum Cocktails (Tried & Tested by The Food Tease)
Ingredients
38 ml (1 1/4 oz.) spiced rum
120 ml (4 oz.) ginger ale
15 ml (1/2 oz.) fresh lime juice
Ice cubes
Directions
Pour the spiced rum in a highball glass containing a few ice cubes.
Top up with ginger ale.
Add the fresh lime juice.
Stir using a mixing spoon.
Garnish according to your inspiration.
Ingredients
60 ml (2 oz.) spiced rum
120 ml (4 oz.) ginger ale
30 ml (1 oz.) lime juice
7 mint leaves
1 tsp. sugar
Ice cubes
1/2 lime slice
1 mint leaf (for topping)
Directions
Combine the mint leaves and lime juice in a highball glass.
Crush using a pestle.
Add sugar, spiced rum and ice cubes.
Top up with ginger ale.
Stir using a mixing spoon.
Garnish with the half lime slice and mint leaf.
Ingredients
45 ml (1 1/2 oz.) spiced rum
180 ml (6 oz.) ginger ale or ginger beer
Ice cubes
3 lime wedges
Directions
Combine the spiced rum and ginger ale in a highball glass filled with ice cubes.
Squeeze in the juice of the lime wedges.
Add the lime wedges.
Stir using a mixing spoon.
Ingredients
45 ml (1 1/2 oz.) spiced rum
60 ml (2 oz.) pineapple juice
30 ml (1 oz.) grapefruit juice
30 ml (1 oz.) orange juice
Club soda
Ice cubes
1 lime wedge
Directions
Combine the spiced rum, pineapple juice and grapefruit juice in a shaker filled with ice cubes.
Add the orange juice.
Shake vigorously for 8 to 10 seconds.
Strain into a highball glass containing a few ice cubes using an ice strainer.
Top up with soda club.
Garnish with a lime wedge.

Directions
Pour spiced rum over ice cubed and Enjoy!
As much as I enjoyed my mojito (no surprise there), I really enjoyed the Ginger Rum. However; I must admit that Chic Choc on it’s own is very, very refreshing and utterly smooth…perhaps too smooth if you get my drift.
Silky and refreshing flavors equates the perfect melange for the summer and well truth be known anytime really! Here’s to summer, fall, winter and spring AND repeat!
