Being a true sun baby (even though my skin color will tell you otherwise) I have always been drawn to the beach and everything that comes with it, be it just recharging my body by basking in the sun to snorkeling for that ‘one of a kind’ shell or diving for exploration. The sea & I have always had a passionate love affair and now I was about to experience what has been awarded 2015’s Top Beach in America by TripAdvisor’s Traveler’s Choice. Siesta Key Beach and several other iconic attractions located in Florida’s beautiful Gulf Coast in Sarasota County. Sarasota also happens to be where my multi-layered journey started and of course FOOD was the driving force to this sunny local!
How fortunate I was, to be asked to take part on a Culinary Immersion trip experiencing the impressive flavors that Sarasota County has. Culinary Immersion trip and then some, as Sarasota County has the highest concentration of Zagat-rated restaurants in Florida which in turn draws in some of the best chefs within the industry. For those of you not familiar with Zagat, it’s a survey which rates restaurants on a 30-point scale in the categories of food, décor, service and cost. It also provides price estimates and a paragraph-sized description (in 2011 Google bought the company for a reported $151 million, not bad for a company that started off by a husband and wife duo who had a passion for dining).
Located on Southwest Florida’s Gulf Coast, Sarasota County offers a vibrant arts and cultural scene, a diverse array of culinary experiences and a variety of opportunities to take advantage of the clear waters and the great outdoors.
Speaking of being fortunate, my adventure started at the idyllic Gulf retreat of the Ritz-Carlton Sarasota where I was a guest during my Culinary Immersion trip. The view from my hotel room was enchanting and breath taking as it overlooked the expansive Bay.

Jack Dusty, The Ritz-Carlton‘s principle restaurant was an excellent start to this culinary trip as it boasts a creative approach to seafood dining and they didn’t disappoint with their hypnotic libations either. Being a fan of the Elderflower liquor Saint Germaine, Jack Dusty’s cocktail ‘The Siren’ (one of their most famous handcrafted cocktails) had me hook, line and sinker.
The Siren was the perfect accompaniment to the seafood delights of crab cakes and deep-fried oysters that I had. I must confess that I usually prefer my oysters in their natural state – RAW. However, I was willing to try and give it a go….like they say, when in Rome! And it turns out that they were pretty tasty with a nice crunch factor.
The Siren: Hendrick’s Gin, St. Germaine Elder Flower Liquor, fresh lemon juice and Prosecco. Served over grapefruit, cranberry & flower ice!

Every restaurant has its signature dishes and renown cocktails but if you’re anything like me, you’ll remember their chef inspired amuse bouche that they served prior to the appetizers; let alone the warm crusty bread that left you intoxicated with its aromas. And with that said, let me introduce you to Jack Dusty’s famous Naval Brown Bread. This buttermilk and molasses bread is just what any table needs. Not only is it heavy with flavor and fragrance but it’s delivery is very original: they serve the bread literally out of a can.
As the story goes, tight spaces and limited resource’s in a ship’s kitchen inspired this unique method of baking bread onboard sailing vessels. This bread came alive as butter was applied…worthy of a try…And now you can. The Ritz-Carlton Sarasota was generous enough to provide the recipe for the Naval Brown Bread.

I know that there are many of you out there that love a good soup. Typically I am not a fan of them for the simple fact that it takes up valuable space in my tummy. Don’t laugh…it’s true. There is a reason why we have always been told to eat a hearty soup, it fills you…thus taking up valuable space. I prefer to reserve that space for other culinary treats but on that particular day, I was going to experience a very refreshing gazpacho that was highly recommended. Refreshing indeed and it was welcomed, as I hadn’t gotten used to the humid temperatures that Sarasota was generously giving out.
The only way to describe the flavors of the strawberry and tomato gazpacho is to say that it tasted like summer. Light and refreshing the soup was. It had remarkable undertones of tarragon and garlic – that alone had just convinced me that it was worthy of my valuable tummy space! Again The Ritz-Carlton Sarasota was generous to provide the recipe for the Strawberry and Tomato Gazpacho.

I’d say that my Culinary Immersion trip was off to a good start: beautiful hotel: check, good food: check, and the warmest of hospitality: check!
As the sun was setting in the distance showcasing a rose colored skyline, I could only imagine how the next few days were going to be. What flavors and experiences was I going to be exposed to?

I had the pleasure of taking part in @tours_de_la_table
guided walking tour - exploring Montréal`s Chinatown. Engaging host, interesting cultural facts, and my favourite, tasty dishes made for a great afternoon.😋😍

Having a very engaging and informative guide is key to any successful tour, and Mélissa Simard, founder of Round Table Tours/Tours De La Table nailed it. Melissa has a wealth of knowledge regarding both Canadian and Chinese history and its connection to Montreal.
.
During the tour, I learned that the Chinese Holiday Inn, the only Chinese Holiday Inn in Canada other than China, all the rooms and decor in the hotel are done in respect to the Feng Shui practice. Additionally, I also learned, amongst many other interesting facts regarding Montreal and its beloved Chinatown, that 50% of businesses in Montréal`s Chinatown are Vietnamese owned.

● The classic Vietnamese dish, Bánh mi (Vietnamese sandwich), was perfect to start off this yummy culinary tour!🥖😋
● @dobeandandy restaurant: BBQ pork, BBQ duck, chicken, and crispy pork. 😍YES!!!
● @chezchili_mtl: Traditional Hunan and Sichuan dishes are their specialty. I devoured their tofu with spicy blackbean sauce!! AND their spicy lotus was amazing! I was pleasantly surprised as to how much I enjoyed this dish! 😍 Plus, their stir-fried Cumin lamb...I could have eaten all of it!!!😋😍
● Kim Fung eatery: dim sum dishes of rice noodles, dumplings, cuttlefish, and Shumai (Chinese dumplings). 🥟🥟
● For drssert: Dragons beard candy dessert: Similar to cotton candy, but with some saltiness from peanuts and sweetness from coconut...super tasty!😍

All aspects of this dining experience were spot on - warm hospitality, tantalizing cocktails, and dishes that pop with flavour. 🥃🍸🔥

Foxy`s head chef, Catherine Couvet Desrosiers and her talented brigade made exceptional wood-fire dishes, that left me wanting for more!!

Sabrina master mixologist at Foxy, made several tantalizing libations for me, but one stood out like no other - the New Delhi.😍🍸🥃 The New Delhi Cocktail was by far the best cocktail I`ve had in a very, very long time! Exotically addictive! 😋

Dishes that I was spoiled with: Homemade feta and pita: 1) burnt eggplant, blueberry, walnut and honey. 2) Radicchio: garlic confit, anchovy, olive and sourdough bread. 3) Cappelletti: corn, chanterelle and nasturtium. 4) Ontario walleye: porcini, lobster mushroom, sherry and chevril. Stunning dishes!!😋

When you have a craving for a tasty Peking duck dinner, @pekingduckottawa delivers on quality, hospitality, and flavour!! 🦆😋

I loved the fact that you could see chefs slicing tasty Peking ducks in the beautiful dining room, as patrons waited with anticipation for their dishes.

Aside from the tasty Peking duck experience, I thought it was a nice touch that the restaurant staff explained and demonstrated how to properly assemble the duck pancakes. Talk about excellent hospitality and perfect for those not familiar with the peking duck experience!!👏👏

To accompany the Peking duck, we also feasted on some tasty marinated jellyfish, Mapo tofu, fried yellow croaker fish, and date filled desserts.

It should be noted that patrons need to call in advance for their Peking duck order.

The duck tartar was exquisite with the use of Indian spices - a real treat! For the main course, and since I was craving some pasta, I chose their scarpinocc dish with my favourite...le @lecoprin_mushrooms with brown butter!! If that wasn`t enough, it was seafood time!🦐🦐 We are talking about scallops, shrimps, salt cod ravioli, and smoked PEI mussels.

Regardless if you enjoy lunch or dinner at Les Fougeres, you won`t be disappointed. An all-time favourite of mine.😋😍

Le Cordon Bleu Ottawa Culinary Arts Institute offers a variety of culinary short courses ranging from demonstrations with tasting, practical workshops, and multiday courses. During this particular workshop, I had the pleasure of seeing students pursue their culinary passions, be it as a hobby and, for some, as a career aspiration.👨🍳👩🏼🍳

Chef Arnaud DeClercq was the instructor chef during this workshop, where braised trout with Riesling wine sauce and spätzle noodles were being taught... absolutely DELICIOUS 😋 😍

I can`t rave enough about their exemplary hospitality. The service was off-the-chart amazing. And the food...well, I was practically licking the sauce off the plate from my poached halibut. I wanted to try something different, and this spectacular dish still has me craving for more!!🐟😋😍

In addition to my halibut dish, their tuna crudo, house caesar salad, and their tender beef dish were all spot on.

When you`re in need of a sensory overload blind tasting experience @blacktartankitchen delivers with stellar results!!

I had the pleasure of experiencing their Summer Fare Games 4-course tasting menu. Everything from the highly addictive cocktails to the `want more, need more` tasting experience were next level!!

The 4-course blind tasting menu had me swooning from the start with their refreshing gazpacho, which was simply fitting on this very hot summer evening. Next was their exemplary scallop dish, which gave a muliti-sensory experience, with the contrast of textures and flavours😍
.
Now my favourite course, Beef time!! 🐂🐂 Their sous-vide striploin with Dijon potato croquettes were ridiculously tasty!! The pièce de résistance...a chocolate and raspberry mousse on a lemon honey crumble with a side of raspberry semifreddo. This was the perfect way to end this extraordinary meal!!👌👌😍

I relished every moment: ✅️ Hong Kong`s endless and impressive skyscrapers
✅️ The majestical Tian Tian bronze Buddha in the mountains (walking up the endless stairs to see the Buddha upclose was worth it)
✅️ The famous Shilin Night Market, the largest and most famous night market in Taiwan 😋😋
✅️ Learning survival skills from their renowned Cidal Hunter School in the mountains
✅️ And so much more!!
= This adventure can only be described as EPIC‼️
