Jack Dusty’s Naval Brown Bread Recipe

Courtesy of The Ritz-Carlton Sarasota. This buttermilk and molasses bread is just what any table needs. Not only is it heavy with flavor and fragrance but it’s delivery is very original: you can serve the bread literally out of a can.

As the story goes, tight spaces and limited resource’s in a ship’s kitchen inspired this unique method of baking bread onboard sailing vessels.

Naval Brown Bread

Serves 6-8

Chewy and dark, this bread gets it’s flavor from buttermilk and molasses. Has a signature cylinder shape or you can bake in molds of your choice.

  • 1 cup of stone-ground polenta
  • 2 cups of rye flour
  • 1/2 cup of whole wheat flour
  • 2 cups of all-purpose flour
  • 2 tsp. of kosher salt
  • 2 tsp. of baking soda
  • 2 tsp. of baking powder
  • 1 cup of honey
  • 1/4 cup of unsulfured molasses
  • 2 1/2 cups of buttermilk
  • 5 eggs, lightly beaten

Mixing instructions:

Combine all your dry ingredients in a mixing bowl. In a separate bowl combine your buttermilk, honey, molasses and eggs and whisk together. Add the egg mixture into your dry and mix until all lumps are gone.

Bake at 350 until centre is dry.
